1. Prepare the seafood stock — 20 minutes
- Heat a large saucepan for 2 minutes over medium-high heat.
- Add 0.34 fl oz (10 ml) olive oil.
- Add 3.5 oz (100 g) shrimp or prawn heads and shells and sauté for 4 minutes over medium-high heat, crushing the heads with a wooden spoon.
- Add 1.8 oz (50 g) onion, 1.8 oz (50 g) leek, and 1.8 oz (50 g) carrot, all finely chopped.
- Cook for 3 minutes over medium heat.
- Add 5 cups (1.2 L) water, 0.07 oz (2 g) salt, and 1 bay leaf.
- Bring to a boil for 3 minutes over high heat.
- Reduce to low heat and cook for 10 minutes.
- Strain the stock and reserve exactly 4½ cups (1.05 L), keeping it at 176-185°F (80-85°C) until added to the rice.
2. Prepare the lobster — 5 minutes
- Cut the 2 lb (900 g) lobster in half lengthwise from the head to the tail.
- Separate the two halves.
- Reserve the juices from the head.
- Cut the tail into 4 pieces and separate the claws.
- Remove only the visible intestinal vein.
Important: do not discard the head or its juices: they contain much of the flavor we want to transfer to the rice.
3. Sear the lobster — 5 minutes
- Heat the paella pan for 2 minutes over high heat.
- Add ⅓ cup (2.7 fl oz / 80 ml) extra-virgin olive oil.
- Place the lobster pieces flesh-side down.
- Sear for 90 seconds over high heat.
- Turn the pieces and cook for another 60 seconds.
- Remove the lobster immediately and set aside.
We are not trying to cook it completely; the goal is simply to brown it and flavor the oil.
4. Prepare the sofrito — 18 minutes
- Reduce to medium heat.
- Add 3.5 oz (100 g) onion, 2.8 oz (80 g) red bell pepper, and 2.1 oz (60 g) green bell pepper, all very finely chopped.
- Cook for 8 minutes over medium heat, stirring every 2 minutes.
- Add 3 garlic cloves (0.4 oz / 12 g), minced.
- Cook for 2 minutes over medium-low heat.
- Add 4.2 oz (120 g) crushed tomatoes.
- Cook for 6 minutes over medium-low heat, stirring every minute.
- Add 0.07 oz (2 g) sweet paprika and mix for 30 seconds over low heat.
The sofrito should be thick and concentrated, with no excess liquid.
5. Toast the rice — 3 minutes
- Add 11.3 oz (320 g) bomba rice to the pan.
- Stir with the sofrito for 2 minutes over medium heat, making sure every grain is coated with oil.
- Add ¼ cup (2 fl oz / 60 ml) dry white wine.
- Cook for 1 minute over medium-high heat, until the obvious smell of alcohol has disappeared.
6. Cook the rice — 18 minutes
- Add the 4½ cups (1.05 L) hot seafood stock, which should be at 176-185°F (80-85°C).
- Add 0.04 oz (1 g) saffron, crumbling it between your fingers first.
- Add 0.04 oz (1 g) ground black pepper and 0.07 oz (2 g) salt.
- Stir once.
- Bring to a boil for 3 minutes over high heat.
- Reduce to medium heat and cook for 9 minutes.
- Then reduce to medium-low heat and cook for another 4 minutes.
- Place the lobster on top of the rice.
- Cook for the final 2 minutes over low heat.
Throughout this stage, do not stir the rice with a spoon. If you need to redistribute the liquid, gently move the pan in small circular motions.
7. Rest — 5 minutes
- Turn off the heat.
- Let the rice rest for 5 minutes, uncovered.
- Finely chop 0.28 oz (8 g) fresh parsley.
- Scatter the parsley over the rice just before serving.

The secret is to sear the lobster first in the same oil that will later be used to prepare the sofrito.
